Hello, dear readers! It’s me, Karina of Karina Dresses! I’m flattered that so many of you take time out of your day to stop by our little corner of the internet. I wanted to pull back the curtain a bit and tell you about a few of the things that have been seeing and up to  this month!



1. April showers bring May flowers ! and a variety of rain coverage !
This is a time when bright raincoats and umbrellas are out and about we are all excited about the colorful  flowers coming!  In Brooklyn last week I saw a very practical raincoat that had an attached head cover for these Hassidic men’s shtreimel hats!



2.  Ever-fresh cilantro!
I love cilantro but it always shrivels up before I have time to use it!  No more.  This article solved my problem.  Just put your cilantro in a glass jar filled with water, top with a plastic bag and store in the fridge.  Your cilantro will stay fresh for weeks!

I  also love cilantro pesto.  Clean cilantro and place in mini chopper with olive oil and lemon. Voila!  Amazing pesto for fish.  Yum!

3. Lemongrass
I lovelovelove lemongrass, but I’d never cooked with it before.  But then I checked out this great video and tried my hand at  a mushroom/coconut/ lemongrass concoction which turned out pretty good for the first time!


4. Muffins in a moment
Sometimes you want something a little sweet but healthy and there are only a few ingredients in the fridge.

Here’s what I had today:
2 aging bananas
Handful of blueberries
2 eggs
1/2 cup of coconut milk
A few chopped walnuts
A little bit of oatmeal
Garbanzo bean flour
Brown rice flour
A bit of agave
Teaspoon of veggie oil
Baking sodaJust mix it together and bake for 20 minutes at 325.  Pretty good for just a few items!

 


5. Being a first time having a dog relationship ~

Bodhi and I are experiencing our first spring together. Seeing things through my dog’s eyes is especially joyful.  He is so in the moment, attending to all he sees, hears and smells. This spring smelling the forsythia is wonderful!
