I have a few friends who have recently switched to gluten-free diets for a variety of reasons. When we eat together, I often try new recipes to accommodate their diets. Unfortunately, a lot of gluten-free recipes involve substitutions, compromises, and ultimately, an inferior taste. I’ve come to prefer cooking naturally gluten-free meals instead of trying to replicate the taste I would get by using wheat flour. Thankfully, there are some incredibly easy ways to do this!
Spaghetti squash is nature’s pasta–amazing, delicious, light and buttery pasta. Just like spaghetti, it goes well with any kind of pasta sauce and toppings. It is also an easy meal to make at work as long as you have a microwave. The necessary ingredients are as follows:
1/2 a spaghetti squash
Delicious add-ons include parmesan cheese, chicken, ground beef, or anything else you like in your pasta. So simple!
Cut a spaghetti squash in half lengthwise. Scoop out the seeds. Place the spaghetti squash in the microwave, cut side up. You can place it on a plate if you want…but I don’t always bother. Microwave on high for 7-8 minutes.
Let cool for about five minutes. Use a fork to scrape out the strands of “spaghetti” onto a plate. Top with the heated sauce of your choice, your toppings, and voila! You have a dish of pasta that is tasty enough to be considered comfort food, and healthy enough to make you feel great! While I don’t have a picture from tonight, I just finished a dish of spaghetti squash, chicken meatballs, sauce, and parm. A-mazing!
