Even with kids heading back to school and routines settling into a more established routine, I’m finding that my social calendar continues to fill up.  It may be that temperatures are finally receding into levels more conducive to outdoor entertaining or maybe just the relief for getting back into a more consistent schedule again.

Whatever the reason, last minute entertaining is becoming a regular thing around here.  Several years ago, I would find myself completely overwhelmed at the prospect of having to come up with not only a dish to share with others that was savory yet simple, but also the right outfit. But no longer!

I now know that having a really flattering, versatile v neck dress like the Karina Audrey in Black and White Paisley and a killer appetizer  is all it takes to effectively be ready for social events without any of the stress.  With my summer garden still producing, I have an abundance of tomatoes and basil so whipping up a fresh and Simple Bruschetta is my go to dish!

Simple Bruschetta

Simple Bruschetta

Ingredients

6 vine ripe tomatoes, diced

1/2 cup fresh basil, chopped

3 cloves garlic, minced

2 tbsp. balsamic vinegar

2 tsp. extra virgin olive oil

1/2 cup fresh mozzarella cheese, sliced

1 baguette, sliced at an angle

Salt and pepper, to taste

Directions

1. Broil bread until lightly toasted, about 5 minutes.

2. Meanwhile, mix together tomatoes, basil, garlic, vinegar, oil, salt, and pepper until mixed.

3. Assemble slices of bruschetta by layering toasted bread, tomato mix, and fresh mozzarella.
